Hello Friend, Aaj mai aap sabhi ke liye ek chatpati aur tasty recipe lekar aaye hu. Aaj mai Punjabi Chhole  ki recipe share kar rahi hu jo meine bina Pyaaz(Onion) aur lehsun(Garlic) use kiye bina banaya hai. Punjabi Chhole ek bahut tasty recipe hai jo Punjab ke sath sath pure bharat me bhi bahut pasand ki jaati hai. Yeh recipe meine ek alag traditional flavour dekar banai hai aur yeh khane me bahut tasty aur delicious hai. Yeh recipe banane me bahut asaan hai aur isko Safed Kabuli Chana(Chickpeas), Tamatar(Tomatoes), aur regular Indian Spices ke sath banaya jaata hai. Punjab me jaise Makke ki Roti ke sath Sarso ka Saag famous hai waise hi waha ke Chhole Bhature bhi sabko behad pasand aate hai.

Ingredients:

  • Kabuli Chana(White Chickpeas) - 250 g
  • Teabag - 1 
  • Tamatar(Tomatoes) - 3-4 
  • Adrak(Ginger) - 1 inch baarik kata hua
  • Hari Mirch(Green Chilli) - 2 baarik kati hue
  • Laal Mirch(Red Chilli) Powder - 1/2 tspn
  • Haldi(Turmeric) Powder - 1/2 tspn
  • Dhaniya(Coriander) Powder - 1 tspn
  • Sarso ka Tel(Mustard Oil) - 2 tbspn
  • Garam Masala - 1/2 tspn
  • Namak(Salt) - Swadanusar
  • Jeera(Cumin Seeds)  - 1/2 tspn
  • Methi Dana(Fenugreek Seeds)  - 1/2 tspn

  • Tezpatta(Bay Leaf) - 1
  • Hing(Asafoetida) - 1 chutaki
  • Dalchini(Cinnamon) - 1 chhota tukda
  • Punjabi Chhole Masala - 1 tspn     

Sajawat Ke Liye:

  • Dhaniya Patta(Coriander Leaves) - 2 tbspn baarik kata hua
  • Nimbu (Lemon) - 1/2 gol kata hua


Method:


1.  Kabuli Chane ko paani me ache se dhokar 8-10 ghante ya phir raat bhar ke liye saaf pani me        bhigokar rakh dein.

2.  Ab pressure cooker me Kabuli Chane ko chhan kar 1/2 litre pani daalein. Ab usme tea bag (Agar aapke pass Tea bag nahi hai to ek saaf malmal ke kapde me Chai ki Patti daal kar usko ache se bandh kar cooker me daal dein) aur 1/2 chammach namak daal kar  Coooker band kar ke gas par rakh kar gas on kar k 4-5 seeti aane tak pakaye.

3. Seeti lagne ke baad gas band kar dein aur cooker ko thanda hone dein. Cooker ka pressure nikal jaane par Chane ko cooker se nikal kar alag bartan me chhan kar rakh lein.  

4. Ek katori me sabhi masale aur namak daal kar ek ghol tayar kar lein. Ab cooker ko gas par rakh kar garam karein. Gas ko medium par kar dein. Usmein sarso ka tel daal kar Methi Dana, Jeera, Tez Patta, Hing, Dalchini, Adrak aur Hari Mirch bhi daal dein. Ab jo masale ka ghol humne banaya tha usko daal dein, jb tak masale se tel upper na dikhne lage tb tak masale ko dhimi aach par pakaye.

5. Masale se Oil alag hone ke baad ab usme Tamatar ki Puree daal dein. Ab ache se masale ke sath mix karte hue pakayein. Ismein lagbhag 4-5 minute ka samay lagta hai. Ab isme boiled Chane aur 2 cup Pani daal kar ache se mix kar ke Cooker ko band kar dijiye.

6. Ab 2 seeti aane ke baad gas ko band kar dein. Ab Cooker ka pressure khatam hone par garama garam Chhole nikal kar Garam Chawal ya Bhature ke sath serve karein.

Meine ye recipe bina Pyaaz Lehsun daale isliye banai hai kyunki kai baar meine dekha hai hamare ghar me kai bade bujurg Pyaaz aur Lehsun ka sevan nahi karte hai aur kitne gharo me Navratri aur sawan me Pyaz aur lehsun ka sevan nahi kiya jata hai, Aise mein ke liye ye recipe ekdum best recipe hai. Note: 

  • Chhole ko banane se pehle km se km 6-8 ghante tak pani me bhinga kar rakhein. Agar aap chhole fulana bhul gaye hai to aap garam pani me 2-3 ghante tak fula kar rakh dijiye aapke chhole banane k liye tayaar ho jayenge.
  •  Chhole ubalte samay aap Tea bag ki jagah Chai Patti ko malmal ke kapde me bandh kar chhole k sath daal sakte hai. 
  • Meine yaha image mein bs salad me pyaaz ka use kiya hua hai meine chhole banate samay pyaaz ka upoyog recipe me nahi kiya hai.
