Namshkar Dosto, Aaj mai apke liye aloo ke parathe banane ki vidhi lekar aaye hu. Aloo ke parathe ko Punjab aur Uttari Bharat me pasand kiya jaata hai. Aloo ke parathe ko breakfast me aur dinner me bahut he chaav se khaya jaata hai.  Inhe dahi, chutney, achar aur aloo tamatar ki sabzi ke sath khane me bahut maza aata hai. Agar bharwa paratho ki baat ki jaaye to aloo ke paratho ko pehle sthan diya jaata hai. Yeh bacho aur bado sabhi ka favourite hota hai. 

Aloo ke paratho ko asan vidhi se ghar par he tayaar kiya jaa sakta hai. Inko banane me adhik samay nahi lagta hai, bs apke pass uble hue aloo hone chahiye aap fatafat aloo ka paratha banakar tayaar kar sakte hai. Aloo ka parathe ko aloo ki pithi or mishran ko mulayam guthe hue aate ke andar bharkar aur belkar banaya jaata hai. 

Isme bahut sari chizo ko aloo ke sath mix kiya jaata hai. Bahut jagah aloo ki pithi banate samay usmein sarso ka tel ya achar ka tel bhi milaya jaata hai. Isse aloo ke paratho ka swaad doguna badh jaata hai.

Avashayak Samagri - Ingredients

Aate ke liye:

  • Gehu ka Aata - 500 gram 
  • Namak - Swadanusar
  • Paani - Aata guthane ke liye
  • Ajwain - 1/2 Tspn
  • Kalonji - 1/2 Tspn
  • Besan - 1 Tbspn


Aloo Ki Pithi Ke Liye:

  • Uble Hue Aloo - 500 gram (10-12 Madhya akar ke)
  • Namak - Swadanusar
  • Ajwain - 1/2 Tspn
  • Kalonji - 1/2 Tspn
  • Jeera - 1/2 Tspn
  • Adrak - 1 inch Baarik kati hue
  • Hari Mirch - 3-4 Baarik kati hue
  • Sarso ka Tel or Achar ka Tel - 2 Tspn
  • Hing - 1 chutaki
  • Dhaniya Patti - 2 tbspn baarik kati hue
  • Refined Tel or Ghee

 Vidhi:

1. Aate ko chaude bartan me nikal lijiye. Ab paani ko halka garam kijiye. Aate me Namak, Ajwain, Kalonji ko ache se mila dijiye aur halka halka paani daal kar ache se ek dam mulayam aur dheela aata guth lijiye. 

Dhyan rakhiye aata dheela guthna hai geela nahi. Aata jitna dheela hoga utna he aloo ka mishran jada bhara jayega. Ab aate ko 15-20 minute ke liye gile kapde de dhak kar chhod dijiye.

2. Ab uble aloo ko kaddu kas kar lijiye. Usmeim Ajwain, Kalonji. Namak, Jeera, Adrak, Hari Mirch, Hing, Sarso ka Tel, aur Dhaniya Patta daal kar ache se mix kar dijiye. Ab gas jalaiye aur Madhyam aanch par Tawa garam karne ke liye rakh dijiye.

3. Ab aata ache se set ho gaya hai ab usme se ek gend ke size ka tukda todiye aur usko hath failate hue bich me jagah banaiye. Ab usmein chammach se aloo ki pithi bhar dijiye aur ungliyo ki madad se aate ko bandh dijiye. Ab hatheli se chapta kar ke sukhe aate ka parthan laga kar belan se halke hatho se gol beliye. 

Ab aap dekhenge paratha khud he bahut ache se failate hue bada ho jayega. Apko jada mehnat karne ki jarurat nahi padegi.

4. Ab tawe par parathe ko daaliye aur gas ko madhyam anch par he rakhein. Ab ek taraf se halka sik jane par palat dein. Ab chammach ki madad se ghee lagayein aur palat dein aur dusri taraf bhe ghee laga dein. Ab ache se parathe ko palat palatnkar ache se sek lijiye.

5. Ab aise he saare paratho ko bana kar sek lijiye. Ab aapke saare aloo ke parathe bankar tayar ho jayenge.

Mere to aloo ke parathe bankar tayaar hai. Aur maine inhe mithi Dahi aur Green chutney ke sath sabko parosa hai. Aap chahe to achar aur Tamatar ya Imali ki khatti meethi chutney aur Jeera wali Dahi ke sath bhe sabko khila sakte hai.

Sujhav:

  • Aata guthate samay ek baat dhyaan rakhein aata geela nahi hona chahiye, aata agar geela hoga to apke parathe phat jayenge. 
          Aate ko mulayam aur dheela he guthiye. Aisa karne se apke parathe bahut he ache banenge.
  • Meine yaha aate me 2 chammach me besan bhe milaya hai isse hamare parathe kurkure banenge.
  • Aloo ki pithi geeli nahi honi chahiye. Kabhi-kabhi aloo ki wajah se bhe aloo ki pithi geeli ho jati hai.
